Slack wins for most cloud-friendly teams on UX and integrations. Mattermost wins for regulated industries, government, and any organization that requires on-premises data control.

Mattermost's real value is the self-hosted deployment, if your organization requires data to reside in your own infrastructure (defense, intelligence, some healthcare, some finance), Slack simply cannot compete.
